Grilled Breakfast Burritos

This is why weekends were invented.

IMG_0543I grilled up some beautiful steaks on the Weber kettle Friday night and ended up with some leftovers. (This also works great with leftover smoked chuck roast.)

IMG_0509IMG_0510Got up early on Saturday, made a pot of coffee and started working on a grilled breakfast.  I switched over to the Weber gasser and started by frying up some hash browns in a cast iron skillet.

IMG_0518Then I cooked some scrambled eggs.

IMG_0523I put everything together on a large tortilla with plenty of the steak, some refried beans and a little cheese.

IMG_0531Rolled this bad boy up and threw it back on the grill.  Man this was a great morning…made me very happy!

IMG_0532After a few minutes, flip it over and work on some more grill marks.

IMG_0536After the grill marks were laid down I moved this over to indirect low heat for about 15 minutes to let the cheese melt and everything warm through.  Poured another cup of coffee and had one of the best breakfasts I have enjoyed in a long time.
